Roasted Butternut Squash with Truffle Honey Yoghurt Drizzle
Ingredients:
- 1 large butternut squash
- 1 red onion
- 3 tablespoons extra-virgin olive oil
- Salt & Pepper
- 3 garlic cloves
- Feta Cheese
- 1 Tbsp Greek Yoghurt
Directions:
- Take 1 large unpeeled butternut squash, halve & deseed. Cut into roughly 1cm thick half moons & wedges
- Cut 1 red onion in wedges
- Add the above into one large baking dish & add 3 large unpeeled garlic cloves
- Drizzle with extra virgin olive oil
- Lightly season with salt & pepper
- Place in a preheated oven at 230C & Roast for 25-35mins or until golden & soft
- Place on the side to cool & then crumble Feta Cheese on top (to your taste)
-In a small bowl mix 1 tbsp Greek Yoghurt & Truffle Guys Gourmet Black Truffle Honey. Either serve on the side or add a dash of water and drizzle on top.
